Venison Chilli

With Lemon, Beans & A Tomato Sauce 
Ingredients
  • Juice of 1 lemon
  • 1kg of minced venison
  • Olive oil
  • 2 chopped onions
  • 2 finely chopped cloves of garlic
  • ½ a teaspoon of thyme
  • 800g of chopped tomatoes (2×400g tins of)
  • 400g of kidney beans
  • 1 bottle of beer (and not lager!)
  • 2 tablespoons of chilli powder
  • 1 tablespoon of sweet chilli sauce
  • Salt and pepper for seasoning

 

Instructions 

P our the lemon juice over the mince, mix in and allow to stand for approximately 30mins.  Heating the olive oil, fry the garlic and onions, then add the mince until it has nicely browned.  Season and add all the other ingredients.  Stir well, then cover and leave to cook for 4 hours.  If it becomes too dry add more beer.
