How to roast venison 
   

M arinade your joint over night in red wine and olive oil.  Remove the meat from the marinade and rub with salt and pepper.  Preheat the oven to 220˚C.  Bard the joint with pork fat and cook for 15 minutes per 450g (1lb).Roasting joints being that of the shoulder, haunch or saddle.

Add vegetables of your choice.
