Venison Lasagne

This delicious Wild Venison Lasagne is really easy and quick to put together, plus it can feed quite a few hungry mouths!

  • 1 tbsp olive oil.
  • 2 sticks celery (chopped)
  • 1 large onion, peeled and chopped.
  • 1 carrot, peeled and chopped.
  • 1 or 2 garlic cloves (pressed)
  • Smoked bacon/ smoked sausage (thinly sliced)
  • 500g minced wild venison.
  • 300ml beef or venison stock.
  • 400g canned chopped tomatoes.
  • 1 tbsp tomato puree
  • 10 dried lasagne sheets.
  • 100ml crème fraiche.
  • 75g cheddar cheese, finely grated.
  • 30g of grated Parmesan cheese.


Cooking Method:

Step 1. Preheat the oven to 200C/Fan 170C/gas mark 5.

Step 2. Heat oil and add onions and fry for 2 minutes before adding the carrots, and celery and frying for a further 3minutes.

Step 3. Add the venison mince breaking it down and stirring, add bacon and cook till mince is brown.

Step 4. Add stock, chopped tomatoes, puree and garlic.

Step 5. Stir well and cook at boiling for 30minutes

Step 6. Heat and stir crème freche, cheddar and parmesan in small ban till the white sauce is created.

Step 7. Add 2/3 of the venison and other ingredients to a medium/large ovenproof dish

Step 8. Layer lasagne sheets on top and pour 1/3 of the white sauce over before adding another layer of lasagne sheets, then the rest of the venison and mixed ingredients, then add the final layer and top with the white sauce that’s left.

Step 9. Add grated cheese to top

Step 10. Cook in oven for 30minutes at 200C

Step 11. Take out, dish up also add a side of salad with drizzle of balsamic vinegar, and some homemade garlic bread.
